Peanut butter lovers unite! Here is a recipe for making just one peanut butter cookie! Most of you know that I love cookies right out of the oven! You may also have learned that to keep from over indulging on cookie dough and eating a dozen hot from the oven cookies, I make just one! That’s right just one fresh from the oven cookie that I may or may not share…. Treats are perfectly acceptable (in moderation).
This cookie is made a bit healthier by switching out ingredients for healthier options. It is made with oat flour instead of processed white flour but you could substitute other flour if desired. Using oat flour also makes it gluten free! This little gem is also free of refined sugar. Pure maple syrup and applesauce are used in its place. The result is a moist cookie that melts in your mouth!
The dough is not firm, it is sticky! Therefore, after spooning it onto a baking sheet I sprinkle it with extra oat flour before pressing it down with a flour covered fork to make those traditional criss-cross lines we expect in a peanut butter cookie.
From beginning to end it only takes 15 minutes to make so your cravings for a fresh out of the oven peanut butter cookie can be satisfied quickly!
