Chocolate Chip Oatmeal Cookie for 1

So you have been eating healthy and you have a craving for a gooey chocolate chip cookie… To be truthful any right out of the oven cookie would suffice. However if you make a batch of cookies you will eat a few spoonfuls of the dough to make sure it tastes okay. Then when those morsels come out of the oven stopping at one, two or three cookies will not happen. Instead you eat more than you can or want to count… And that one little indulgence sets you spiraling out of control…
So what to do? Make just one cookie! It is quick and it is huge so you can share it if you want (not likely..but you can). One of my favorite cookies is chocolate chip oatmeal. I cleaned it up just a little (the sugar and butter are still there…). In place of all purpose flour I used a gluten free 1-1 flour mix by Bob’s Red Mill. (Always check ingredients to make sure that they are gluten free.) Of course there are calories, it is an indulgence and after all it is a cookie! Enjoy!

Chocolate Chip Oatmeal Cookie for 1

Serves 1
A delicious gooey, crispy on the edge cookie for one person (or two if you want to share)
- 2 tablespoons grass fed butter
- 2 tablespoons, packed, organic brown sugar
- 1 tablespoon organic cane sugar
- 1 tablespoon whisked egg
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
- 1 pinch salt
- 1/8 teaspoon baking soda
- 1/4 cup gluten free 1 to 1 baking flour mix
- 2 tablespoons old fashioned oats
- 3 tablespoons chocolate chips
- Preheat oven to 350 degrees
- Line a baking sheet with parchment paper
- In a microwavable bowl, melt butter until it starts to melt
- Add sugars, salt, vanilla, and cinnamon
- Mix until well blended
- Add egg and stir again
- Add flour, oats and baking powder
- Stir until just combined
- Stir in chocolate chips
- Form cookie dough into a ball and pat it into a cookie shape
- Bake for 10-12 minutes, edges should be golden brown
- Remove from oven and enjoy!
- You can use all purpose flour in place of gluten free flour.
