Chocolate Chip Mug Cake

You are home alone. It is late. You have a craving for something sweet and only cake will satisfy your craving…. What to do? If you make a cake you will eat not just one piece but a sliver here and there until it is gone. Then you will feel guilty and kick yourself for over indulging… But you really want a piece of cake…
Mug cakes are a wonderful option! They take minutes to make and serve just one unless you want to share it! Instead of days of indulging on cake you eat just one serving and it is gone! One of my favorites is Chocolate Chip Mug Cake because icing is not needed, saving on additional calories. Now don’t mistake me, this mug cake has everything we have come to love in a sweet treat including butter and sugar. So it is not to be eaten daily…even if you want to. (I did use a mix of gluten free and oat flour, organic sugars and grass fed butter to try and keep it on the “clean” side.)
This mug takes only 7-8 minutes from beginning to end and uses just one dish, a mug! So clean up is quick too.
Chocolate Chip Mug Cake

Serves 1
A quick and easy cake for one! No frosting required!
- 2 tablespoons grass fed butter
- 2 tablespoons organic cane sugar
- 1 tablespoon packed brown sugar
- 1 tablespoon whisked egg
- 1 tablespoon water
- 1/4 teaspoon organic pure vanilla extract
- 1/4 cup gluten free 1 to 1 baking flour
- 2 tablespoons organic oat flour
- 1/4 teaspoon baking powder
- pinch of salt
- 2 tablespoons chocolate chips plus a few to place on top
- Melt butter in a 1 cup or larger mug
- Add sugars and stir to combine
- Add egg, water and vanilla
- Stir to combine
- Add flours, baking powder and salt to the mug
- Stir until combined
- Add 2 tablespoons chocolate chips.
- Stir until just combined
- Place mug in the microwave
- Cook 1 - 2 minutes until a toothpick comes out clean
- Place extra chocolate chips on top
- Dig in or serve immediately!
- This is definitely a treat! If I eat the whole thing I count it as 2 yellows! (But I usually share)
- You can use all purpose flour in place of gluten free flour if desired.
