Roasted Turmeric Pumpkin Seeds

This is a super simple and quick recipe! Once you start snacking on these little gems it is hard to stop! They would make a lovely gift when stored in a cute little glass jar!
Did I mention health benefits? To begin pumpkin seeds or pepitas are an excellent source of minerals and antioxidants. They are rich in fiber and protein. A one-cup serving contains 12 grams of fiber and 12 grams of protein! A win win for nutrition! To add to this healthy concoction turmeric is an excellent anti-inflammatory source and high in minerals and antioxidants. Arthritis watch out I am eating pumpkin seeds with turmeric! Best of all these seeds taste delicious by themselves or sprinkled on salad.
You can adjust the seasonings but don’t skip the hot sauce! It pairs well with the turmeric and adds just a very tiny spice but not enough to put your mouth on fire. Kids will enjoy these too!
Roasted Turmeric Pumpkin Seeds

These seeds are full of health benefits and once you start snacking on them it is hard to stop!
- 1 cup raw pumpkin seeds (pepitas)
- 1 teaspoon olive oil
- 2 drops hot sauce (1/8 teaspoon)
- ½ teaspoon pink Himalayan salt or sea salt
- ¼ teaspoon fresh ground pepper
- 1 teaspoon turmeric
- Preheat oven to 350F degrees.
- Place oven rack on center position.
- In a small bowl, add ingredients stirring with a fork after each addition.
- When well mixed spread the seeds in a single layer on a baking sheet.
- Bake for 5 to 8 minutes, until pumpkin seeds start to darken and plump up slightly. (you may hear them pop)
- Remove from oven and let cool completely.
- Feel free to change the quantities to your liking.
- You may be tempted to skip the hot sauce but don’t. It adds just the right bit of spice and pairs well with turmeric.
- These are great eaten alone as a snack or tossed in a salad or over roasted vegetables.
- The make a great gift in a pretty jar!
- Store the seeds in an airtight container for up to a week.
