Zoodles!! How can you go wrong with a name like zoodles! A great alternative to pasta!This recipe was surprisingly a huge hit! So flavorful!  Best of all it is quite healthy!  It is easy and quick to make. I got home from work and had this on the table in less than 30 minutes! That is definitely a winner!

Pumpkin Sausage and Zoodles! Healthy and savory!I used organic canned pumpkin, Sweet Italian Turkey Sausage, and instead of pasta made zoodles! (zucchini noodles)

I do make my own zoodles with a spiralizer but I have seen them in the produce section of some stores.  You can also use a vegetable peeler and make flatter zoodles.  I do not cook the zoodles.  I have found they get too mushy and we do enjoy a little crunch.  

Just pour the sauce on top and you are done!  Simple, easy, healthy and delicious!

Ingredients
  1. 4 - 5 cups uncooked zucchini noodles
  2. 1/2 pound Sweet Italian turkey sausage links, casings removed
  3. 1/2 pound sliced fresh mushrooms
  4. 1 medium onion, chopped
  5. 4 garlic cloves, minced
  6. 1 cup reduced-sodium chicken broth
  7. 1 cup canned pumpkin
  8. 1/2 cup white wine or additional reduced-sodium chicken broth
  9. 1/2 teaspoon rubbed sage
  10. 1/4 teaspoon salt
  11. 1/4 teaspoon garlic powder
  12. 1/4 teaspoon pepper
  13. 1/4 cup grated Parmesan cheese
Instructions
  1. Add the sausage, mushrooms and onion to a large skillet coated with cooking spray or olive oil.
  2. Cook over medium heat until the meat is no longer pink.
  3. Add garlic; cook 1 minute longer.
  4. Stir in the broth, pumpkin, wine, sage, salt, garlic powder and pepper.
  5. Bring to a boil.
  6. Reduce heat; simmer, uncovered, for 5-6 minutes or until slightly thickened.
  7. Pour sauce over the zoodles and sprinkle with cheese.
  8. Enjoy!
