Pumpkin Chili

When I was searching for pumpkin recipes for our Pumpkin Gone Crazy Recipe Group I came across several for Pumpkin Chili. I could not imagine what chili would taste like with pumpkin in it… However, curiosity got the best of me and I began experimenting with recipes. The Thug Kitchen Pumpkin Chili Recipe was my favorite. Reading the Thug Kitchen Cookbook is also a favorite. It will entertain you, make you laugh and provide incredible recipes!
So after making a few changes this chili was perfect for our family. I did not add meat to it but if you want meat in your chili add a pound of cooked ground turkey or organic ground beef. And if you are wondering, it does not taste like pumpkin at all. It tastes like…well…chili! Just a tiny bit sweeter.
Pumpkin Chili

Serves 4
This is a hearty, delicious chili! If you don't say anything, no one will guess that there is pumpkin in it!
- 1 tablespoon olive oil
- 1 cup chopped onion
- 1 cup diced carrots
- 1 diced bell pepper
- 2 to 3 cloves garlic, minced
- 2 teaspoon liquid aminos or soy sauce
- 2 1/2 tablespoon chili powder
- 1 teaspoon roasted ground cumin
- 1 can (14.5 ounces) low-salt diced tomatoes
- 1 (15 oz.) canpureed pumpkin
- 2 cups vegetable broth
- 1 can organic black beans
- 1 can cannellini beans
- 1-2 tbsp lime juice (half a lime)
- Toppings of your choice: cilantro, chopped onion, jalapeños, avocado, tortilla strips, cheese, sour cream...
- In a large pot, heat the oil over medium heat.
- Add the onion and carrot and saute until lightly brown, around 5 minutes.
- Add the garlic, liquid aminos/soy sauce, chili powder and roasted cumin.
- Cook for 30 seconds, until fragrant.
- Deglaze with the tomatoes.
- Stir in the pumpkin, broth and beans.
- Bring to a boil, cover, reduce heat and simmer for 15 minutes.
- Stir occasionally to keep the chili from sticking to the bottom of the pan.
- Remove from heat, stir in lime juice and season to taste.
- Top with your choice of toppings.
- Enjoy!
