We just finished one of the most fun FREE 5 Day groups yet! A Healthy Muffin Tin Recipe Group! So many wonderful recipes were shared.  Who knew that muffin tins could be so versatile?  They are not just for icing topped cupcakes and sugar filled muffins! They can be used for healthy breakfasts, side dishes, snacks and meals!  Here are some benefits of muffin tins:

  • They are portable
  • They provide built in portion control
  • They are customizable: Someone doesn’t like green peppers? Just leave them out of a few!
  • They are great for meal prepping: freezable and re-heatable
  • They are adorable and even impressive: kid friendly and great for company!

My favorite benefits have to be portion control and meal prepping! Portion control is one of the key components in addition to clean foods for a healthy diet, weight loss and maintenance.    So nice to not guess on serving size but to know exactly what it is! Being able to make a dozen or more and freeze them sure saves time for future meals!

During the group I made these absolutely delicious Healthy Lasagna Muffin Cups! My husband gobbled them down and said it would be nice if I made them again. So I consider them husband approved! My grandson loved them too! He thought that eating “cupcakes” for dinner was pretty cool!

These are super easy to make and only bake for about 10-12 minutes! No need to cook pasta noodles for this dish as you will use wonton wrappers instead. I usually find them in the produce section of my local grocery store. You can make your own sauce such as Grandmas Sauce from the “Fixate Cookbook”  or you can choose to use a jar sauce. However if using a jar sauce make sure and check the ingredients to avoid all those unwanted sugars, preservatives and chemicals!  These little baby lasagnas look impressive enough to serve for company and are definitely delicious enough to impress your guests! Just add a garden salad and you have a healthy delicious meal!

Healthy Lasagna Muffins
Serves 6
Simple, easy, healthy and delicious lasagna muffins! No noodles required!

  1. 1 1/2 cups of marinara sauce (homemade or store bought)
  2. 1 pound of ground turkey or grass fed ground beef or Italian sausage
  3. 1 1/2 cups low fat ricotta cheese
  4. 1/2 cup grated Parmesan cheese
  5. 2 teaspoons dried basil leaves
  6. 2 teaspoons Italian seasoning
  7. 1 1/2 cups shredded mozzarella cheese
  8. 24 (2 inch) wonton wrappers
  1. Preheat the oven to 350 degrees.
  2. Heat a large skillet over medium heat. Add meat and cook until browned, about 3-5 minutes, making sure to crumble it as it cooks.
  3. Drain excess fat .
  4. Stir in marinara sauce and simmer on low heat.
  5. While sauce is simmering, stir together the ricotta, Parmesan, and 3/4 cup mozzarella cheese.
  6. Add basil and Italian seasoning a mix well to combine.
  7. Set cheese mixture aside.
  8. To assemble the muffins: Spray a muffin pan (12 muffins) with non-stick spray. Place a won ton wrapper in each cup. (I used square ones), pressing carefully to make sure there is an opening in the center. Fill each cup with 1 tablespoon ricotta cheese. Top with 1 tablespoon marinara mixture and 1 tablespoon mozzarella cheese; repeat with one more layer. The cups will be very full!
  9. Place the pan in the oven and bake for for 10-12 minutes.
  10. If the cheese has melted and the won ton wrappers are golden brown they are done!
  11. If not cook for a few more minutes until they are done.
  12. Remove the pan from the oven.
  13. Let them rest for about 10 minutes before removing them from the pan.
  14. They should come out very easily!
