Have you ever come home after a long day and needed to get dinner on the table pronto! These tostadas are amazing! Easy, quick and healthy! And did I say filling? They are great for a busy night and fun for kids to put together! To make them quicker I either cook and shred chicken ahead of time or buy a rotisserie chicken. I also look for black bean salsa without all the extra refined sugar, artificial ingredients and preservatives.
For fun you can set up a tostada bar! Put the toppings on the table and let everyone make their own! You can also get creative and add on other toppings as desired, maybe a little corn, sliced green onion or fresh cilantro…
Then simply top with shredded lettuce, chicken, salsa, avocado, shredded cheese if desired and Greek Yogurt.
On the Portion Fix Plan I would count 2 tostadas as 1 red, 1 yellow, 1 green, 1 blue
