Black Bean and Chicken Tostadas! Quick, easy, clean, healthy and FUN!

Black Bean & Chicken Tostadas

Have you ever come home after a long day and needed to get dinner on the table pronto!  These tostadas are amazing! Easy, quick and healthy! And did I say filling?  They are great for a busy night and fun for kids to put together!   To make them quicker I either cook and shred chicken ahead of time or buy a rotisserie chicken.   I also Black Bean and Chicken Tostadas! Quick, easy, healthy and FUN!look for black bean salsa without all the extra refined sugar, artificial ingredients and preservatives.  

For fun you can set up a tostada bar! Put the toppings on the table and let everyone make their own! You can also get creative and add on other toppings as desired, maybe a little corn, sliced green onion or fresh cilantro… 

Then simply top with shredded lettuce, chicken, salsa, avocado, shredded cheese if desired and Greek Yogurt.

On the Portion Fix Plan I would count 2 tostadas as 1 red, 1 yellow, 1 green, 1 blue

A quick and healthy dinner that is filling! Fun to put together and kid approved!

Ingredients
  1. 2 (6 -inch) corn tortilla (100 calories for 2)
  2. 4 tablespoons Black bean salsa, such as Newman’s Own
  3. 3/4 cup cooked chicken, shredded and divided
  4. ¼ avocado, sliced
  5. 2 tablespoons nonfat plain Greek yogurt
  6. 1 cup shredded lettuce, divided
  7. 1-2 tablespoons shredded cheese - optional
  8. coconut or olive oil cooking spray - optional
Instructions
  1. Preheat broiler
  2. Spray tortillas with cooking spray
  3. Place tortilla under broiler until slightly brown and crisp
  4. Check tortillas frequently so they do not burn or get too brown
  5. Top with lettuce, chicken, salsa, avocado, cheese if desired and Greek yogurt
Notes
