Kate loves her granola! By making your own, you control the ingredients!I love granola! And it is pumpkin season so why not make pumpkin granola!

I love to layer granola in yogurt parfaits or even eat it by itself.  My granddaughter Kate, a picky one year old, will eat granola by the bowl! The issue with store bought granola is that it is often high in sugar and other unwanted ingredients.  I have made granola in the oven but when I discovered making it in a skillet I was won over.  It is quick and ready in 10 – 15 minutes! And is crunchy and yummy!  

The best part abouSkillet Pumpkin Granola: Filled with super foods! Quick and Easy!t making it yourself is that you control the ingredients. Since I love pumpkin this granola is flavored with pumpkin pie spice! You can adjust the flavor to your taste. I also include some extra super foods for added nutrition such as chia seeds, almonds and pumpkin seeds.  I do use a little brown sugar but I use organic sugar so that it is not quite as processed.  How much you use depends on your taste.  I also add a touch of honey. After all everything is a little tastier with a touch of honey!

Skillet Pumpkin Granola! Quick easy and healthy!You brown the oats in a large non-stick skillet over medium high heat, stirring often.  As soon as they become a golden brown transfer them to a bowl. This takes about 4 minutes.

Add your coconut oil, brown sugar, honey, vanilla and pumpkin pie spice to the skillet. Stir to mix well and cook Skillet Pumpkin Granola! Quick easy and healthy!stirring constantly for approximately two minutes.

Add the oats, pumpkin seeds, sesame seeds, chia seeds and almonds.  Cook for 5 – 6 minutes, stirring every 2 minutes to keep them from sticking or burning.Skillet Pumpkin Granola! Quick easy and healthy!

Remove from heat and transfer your granola to a cookie sheet.  Spread all that delicious crunchy granola out so it can cool evenly! Store it in a Ziplock bag or air tight container!

If you are following the 21 Day Fix Food Plan I count 1/2 cup as 1 yellow and 1/2 orange!

Ingredients
  1. 2 Cups Quick/Instant Plain Oats
  2. 2 Tbsp Organic Brown Sugar
  3. 1 Tsp Honey
  4. 2 Tbsp Coconut Oil
  5. 1 teaspoon pumpkin pie spice
  6. 1 teaspoon Pure Vanilla Extract
  7. 3 Tbsp Almonds - Thinly sliced
  8. 1/3 cup Pumpkin Seeds
  9. 2 Tbsp Sesame Seeds
  10. 2 Tbsp Chia Seeds
Instructions
  1. In a non-stick skillet, toast oats on medium heat until golden brown (Takes about 4 minutes).
  2. Transfer to a bowl.
  3. In the same pan, heat coconut oil, until melted.
  4. Add the sugar, honey, vanilla and pumpkin spice.
  5. Mix well and cook for about 2 minutes, stirring constantly.
  6. Add sesame seeds, chia seeds, pumpkin seeds,almonds and toasted oats.
  7. Cook over medium heat for 5 - 6 minutes, (stirring every 2 minutes to prevent sticking or burning.
  8. Turn off the heat and transfer to a cookie sheet.
  9. Spread evenly and allow granola to cool.
  10. Serve fresh or store in a Ziploc bag or air tight container.
Notes
  1. Adjust the ingredients to your liking and taste!
  2. Container count for 21 Day Fix Food Plan: 1/2 cup equals 1 yellow container, 1/2 orange container.
