I love granola! And it is pumpkin season so why not make pumpkin granola!
I love to layer granola in yogurt parfaits or even eat it by itself. My granddaughter Kate, a picky one year old, will eat granola by the bowl! The issue with store bought granola is that it is often high in sugar and other unwanted ingredients. I have made granola in the oven but when I discovered making it in a skillet I was won over. It is quick and ready in 10 – 15 minutes! And is crunchy and yummy!
The best part about making it yourself is that you control the ingredients. Since I love pumpkin this granola is flavored with pumpkin pie spice! You can adjust the flavor to your taste. I also include some extra super foods for added nutrition such as chia seeds, almonds and pumpkin seeds. I do use a little brown sugar but I use organic sugar so that it is not quite as processed. How much you use depends on your taste. I also add a touch of honey. After all everything is a little tastier with a touch of honey!
You brown the oats in a large non-stick skillet over medium high heat, stirring often. As soon as they become a golden brown transfer them to a bowl. This takes about 4 minutes.
Add your coconut oil, brown sugar, honey, vanilla and pumpkin pie spice to the skillet. Stir to mix well and cook stirring constantly for approximately two minutes.
Add the oats, pumpkin seeds, sesame seeds, chia seeds and almonds. Cook for 5 – 6 minutes, stirring every 2 minutes to keep them from sticking or burning.
Remove from heat and transfer your granola to a cookie sheet. Spread all that delicious crunchy granola out so it can cool evenly! Store it in a Ziplock bag or air tight container!
