Cupcakes are those sweet delights that put a smile on your face! They make ordinary days special and holidays and special occasions downright delightful! How can anyone be sad when they have a cupcake!
So this Halloween I was determined to make “cleaner” cupcakes. Most cupcakes are full of “scary ingredients” such as processed ingredients, refined sugar, white flour… So I searched around and found a frightfully fudgy cupcake for Halloween. It isn’t as light as your box cupcake and a little crumbly but it is rich and chocolaty. The chocolate peanut butter frosting is definitely the icing on the cake, I could have licked the bowl!
The most “unclean ingredient I used was white chocolate for the spider webs. I couldn’t figure out what to use in its place. However, only a small amount is used.
There is no white flour or refined sugar (except for the spiderwebs) in the cupcake or frosting. Make sure you use almond flour and not almond meal. Instead of sugar you will be using honey in the cupcake as well as the frosting.
My biggest suggestion is to pipe the spider webs on as soon as you frost them! Pipe white chocolate circles onto the top of the cup cake then starting in the center use a toothpick and drag it to the outer circle. Return the toothpick to the center and repeat around the circumference of the cupcake.
Chocolate Fudge Cupcakes

Yields 8
A fudgy cupcake that is free of processed sugars and grains! It is gluten free!
¼ cup smooth natural peanut butter (I use organic)
¼ cup plus 1 tablespoon cocoa powder (I use organic)
2 tablespoons raw honey
Spiderwebs: 1 - 2 cups white chocolate chips
Instructions
Combine all ingredients EXCEPT honey in a small saucepan over low heat stirring until well combined.
When smooth remove from heat, add honey and stir until well combined.
Frosting will be a bit runny.
Let the cupcakes and frosting cool before frosting! Cupcakes are great reheated in the microwave!
Spiderwebs
Melt chocolate and pour it into a plastic gallon bag.
Cut the tip of one corner of the bag.
Squeeze chocolate onto cupcakes making a bulls eye on each one.
Using a toothpick begin at the center of the cupcake and drag the toothpick to the outer circle.
Return to the center and repeat in wedges.
You should have about 8 wedges on each cupcake.
Notes
If making spider webs immediately pipe the chocolate on and create the web. Do not let frosting set before doing so.
