Beef and Pumpkin Stew

Cinderella is not the only one who likes a good pumpkin!

This time of year I love all things pumpkin! When I came across a recipe for stew with pumpkin I had to try it.  It is actually cooked twice. Once in a pot and then baked in the oven inside a pie pumpkin. Not only does it taste yummy especially on a cool fall night but is quite festive!

When this stew is simmering the whole house smells delicious and feels warm and cozy.  It is easy to put together but does have quite a few ingredients.  It also cooks for a long time to let those flavors marry together. However it is well worth waiting for. My husband will vouch for that! He loves a hearty, savory stew and this fit the bill!

I cook it inside several smaller pie pumpkins but you can use  larger ones too.  If you are not feeling adventurous you can skip baking the stew in the pumpkins and serve it right from the pot! Nothing wrong with that! 

If you don’t have time to cook this all in one day: cook the stew the day before, heat it up in the microwave, then spoon it into pumpkins to bake. I have not tried cooking the stew in a slow cooker but I would think it would do great.  If you try it let us know how it turned out.

This stew is clean and healthy, perfect for the 21 Day Fix or Country Heat Plans. Left overs are great too!
