This entree is sure to have mouths watering! It is impressive looking and delicious. However it only has 4 ingredients and is EASY! Chicken, pepperoni, pizza sauce and cheese, that is all you need!
To make things as easy as possible I use thinly sliced chicken breasts. You can use boneless skinless chicken breasts but will need to pound the heck out of them to thin them out. I prefer to skip that part and buy thinly sliced chicken breasts. They cost more but saves me time and time is what I am often short on!
As you know, I really try to make clean, healthy dishes. So what about pepperoni? Pepperoni is full of nitrates, preservatives…. However, I found that Apple Gate has a turkey pepperoni that is nitrate and preservative free! Perfect for this recipe! When choosing pizza sauce I look for a sauce that is free of sugar, preservatives, hydrogenated oils – basically anything I can’t pronounce or have no idea what it is.
To create these pizza delights lay each chicken breast flat, place 3 slices of pepperoni down the middle and top with 1/2 slice cheese. Roll up the chicken and secure it closed with toothpicks. Spray a small baking dish or pie plate with coconut spray. Pour 1/2 of the pizza sauce in the bottom of the dish. Place chicken rolls in the dish. Pour remaining sauce on top, cover with foil and bake for 30-40 minutes or until chicken is no longer pink. Uncover, place 1/2 slice of cheese on each chicken breast and bake until cheese is melted. To complete the meal add a salad, sauteed green beans and crusty whole wheat bread. ENJOY!
