Bacon isn't just for breakfast! Try this healthy strawberry bacon salad!

Mmm… bacon! I love everything about it! The smell, the taste… I will admit that that is one thing I am not willing to give up on my healthy lifestyle… And I do not have to! Turkey bacon does provide a healthier option but sometimes this girl has to have regular bacon.  There are some things I have learned to look for.  It is more expensive but for both turkey and regular bacon I look for nitrate free, preservative free…. And since I usually drink a shake for breakfast I do believe that bacon is great for any meal!

This 5 Ingredient Strawberry Bacon Salad is a perfect example of that! The sweetness of the strawberries and saltiness of the bacon, pair together perfectly! You can throw it together quickly!  It is pretty enough and tasty enough to serve at an afternoon luncheon.  I used to crumble the bacon but have found that breaking it into chunks is just fine!  The original recipe called for toasted almonds but I often use what is in my pantry – pine nuts, almonds, pecans or walnuts! Just toast them for a few minutes in the oven, let them cool and enjoy! Add your favorite healthy vinaigrette or poppy seed dressing and you have a gorgeous delicious salad.

Ingredients
  1. 8 cups of spring and or fresh baby spinach
  2. 1/2 cup toasted nuts (almonds, pecans, pine nuts or walnuts)
  3. 8 slices cooked nitrate free, preservative free turkey or regular bacon broken into pieces or crumbled
  4. 2 cups sliced strawberries
  5. Vinaigrette or poppy seed dressing
Instructions
  1. Chop lettuce and place it in a large bowl
  2. Add nuts and bacon, toss to mix
  3. Add strawberries just before serving
  4. Serve dressing on the side.
Notes
  1. Look for healthy dressings without high fructose corn syrup or sugar added. Balsamic or raspberry vinaigrette's are usually good choices.
  2. Container count for 21 Day Fix: Approximately 2 greens, 1/2 blue, 1 red, 1/2 purple (account for dressing according to what you use)
  3. If you want to add a sprinkle of cheese, feta and goat cheese go nicely with this salad. Don't forget to count this in your container amounts!
