5 Ingredients for Healthy Spinach Parmesan pastaPasta with marinara sauce is a stand by meal in this house.  It is quick and easy.  But sometimes I longingly dream about those creamy cheesy pasta dishes…  However they are often not so clean or healthy and require more work than I care to do after a long work day. That is until I came across this quick and healthy pasta dish, Spinach Parmesan Pasta – only 5 Ingredients! Woo hoo!  Add a salad and you have a meal good enough for company!  This pasta dish tastes rich but easily fits into a healthy clean eating plan including a serving of veggies.  It also satisfies cheese lovers with grated Parmesan or Italian Pecorino Romano Cheese mixed in. To make it healthier we used brown rice pasta although whole wheat pasta works just fine.  Beware, this pasta dish although it is created with just a few ingredients it is easy to go over on portions.  So make sure and keep your pasta serving in check!

Ingredients
  1. 8 ounces of whole wheat uncooked pasta
  2. 3 tablespoons butter
  3. 2 teaspoons minced garlic
  4. 5-6 cups baby spinach
  5. ½ cup grated Parmesan cheese
  6. salt and pepper to taste
Instructions
  1. Cook pasta according to directions
  2. Drain pasta, reserving ½ cup pasta water, set aside.
  3. Melt butter in the same pot over medium heat.
  4. Add garlic, cook 2-3 minutes.
  5. Add spinach, cooking until leaves begin to wilt.
  6. Add pasta toss gently until well combined.
  7. If pasta appears too dry add some of the reserved water.
  8. Add cheese and toss gently until combined
  9. Season with salt and pepper to taste.
  10. Serve immediately
Notes
  1. NOTE: I use whole wheat pasta or brown rice pasta.
  2. I have also used Parmesan or Italian Pecorino Romano cheese in place of Parmesan cheese
