Country Heat is my new favorite fitness program by Autumn Calabrese the developer of 21 Day Fix. It is a cardio dance fitness program that has you working up a sweat without you even realizing it until you are finished. Why? Because it is foot stomping, toe tapping, heel kicking fun! It is a great workout for the entire family!
The program comes with exercise DVD’s, Eating plan and portion control containers. The eating plan is the same plan found in the 21 Day Fix program. The eating plan, in addition to the basics, includes yummy recipes! I was immediately drawn to a recipe in the Country Heat Eating Plan Book for Savory Sweet Potato Hash. Autumn Calabrese not only knows fitness but can cook up great healthy meals! And with a few tweaks this recipe did not disappoint!
In this house we love sweet potatoes and quick healthy meals. We also are drawn to colorful “pretty” food. This recipe is full of color and flavor. I have made it a couple times now once with turkey and again with lean, organic ground beef. Both versions were equally good.
To save time and get uniformed cubes of potatoes, peppers and onions I used a Slap Chopper. The veggies were cubed in no time. Hand chopping them would have taken quite awhile and the result would not have been as pretty!
Initially we did think the Sweet Potato Hash was a little bland so I adjusted the seasonings, adding a little of this and a little of that until I found the right combination for this family’s palates. What did I add? I added ½ teaspoon of garlic powder, 1 teaspoon of smoked cumin, and 1 teaspoon of dried oregano. It is an easy recipe to tailor to your tastes.
So turn up the music put your boots on and get moving and cooking!
Savory Sweet Potato Hash
A simple and quick meal that is full of flavor and color!
2 medium sweet potatoes, peeled and chopped into cubes
1 pound 93% lean ground turkey breast or organic lean ground beef
2 cloves of garlic, minced
½ teaspoon dried thyme
½ teaspoon garlic powder
1 teaspoon smoked cumin
1 teaspoon oregano
sea salt or pink Himalayan salt and pepper to taste
Add oil to a medium skillet and heat over medium high heat.
Add onion, peppers and sweet potatoes to the skillet.
Cook for 8 -10 minutes, stirring frequently until onion is translucent and sweet potatoes are tender crisp.
Add meat and cook for 5 -6 minutes, stirring frequently, until meat is cooked through and sweet potato is soft.
Add seasonings and cook for 1 minute, stirring frequently to prevent sticking.
Adjust seasonings to taste and enjoy!
Container Equivalents (per serving: 3/4 cup) ½ green; 1 yellow; 1 red; ½ teaspoon.
