Cleaned Up S’mores!

Nothing brings more memories of warm summer nights around a campfire than s’mores! Laughter, singing, fun and gooey chocolate heaven!

But did you ever look at the ingredients in marshmallows?  Here are ingredients right from the package of a popular brand: Corn Syrup, Sugar, Dextrose, Modified Cornstarch, Water, Contains Less than 2% of Gelatin, Tetrasodium Pyrophosphate (Whipping Aid), Natural and Artificial Flavor, Blue 1.  A lot of these ingredients that do nCleaned Up S'mores!ot fit into a clean eating plan…  But do not get too worried there are options.

If you are really motivated you can make your own marshmallows (I haven’t attempted that yet). And while you are at it you can make your own healthy graham crackers (I haven’t done that yet either).

Or you can do what I do and purchase healthier graham crackers (even organic ones) and make this version of a s’more! A cream cheese s’more! They can’t completely take the place of a marshmallow s’more but they are pretty darn tasty! And they do not have you hopping off your clean eating path! 

With that said you do have to be on your toes when purchasing ingredients. Not all are clean and some are cleaner than others so READ the ingredients carefully! For Makings for a healthier s'moreexample some brands of cream cheese contain extra ingredients like maltodextrin and inulin (a sweetener). I choose organic brands to avoid those unwanted added extras! 

These s’mores aren’t made over the fire or grill but rather right in your microwave so it is ready in a flash!  This is great because s’mores can now be a year round treat!  However if you want to cook them on a grill line the grate with foil. Place the prepared cracker (without the top cracker) on the foil. Watch them closely and remove when the chocolate begins to melt. Place a graham cracker on top and you are ready to enjoy a Cleaned Up S’more!

Cleaned Up S'mores
Serves 6
A chocolaty gooey s'more that is a cleaner and healthier option from the traditional marshmallow treat!

Ingredients
  1. 1/4 cup low-fat plain organic cream cheese, softened
  2. 1 tablespoon agave
  3. 2 teaspoons dark cocoa powder (70% cocoa or greater)
  4. 12 organic graham crackers
  5. 1 tablespoon raw cacao nibs/semi sweet chocolate chips
Instructions
  1. In a small bowl, combine cream cheese and agave.;
  2. Mix until smooth.
  3. Stir in cocoa powder and mix until almost completely blended
  4. (you want a few streaks of white left)
  5. Break the graham crackers into 24 squares.
  6. Spread 1 1/2 teaspoons of the cream cheese mixture onto 12 of the graham cracker squares.
  7. Sprinkle miniature chocolate chips on top of cream cheese.
  8. Place crackers on a microwavable plate cook on high for 10 or until the chocolate softens.
  9. Top each with a remaining cracker.
  10. Enjoy!
