Grilled Fruit isn’t just for dessert! Try a grilled fruit salsa!
I love fruit salsa’s on grilled fish and came up with this recipe when I was experimenting with grilling fruit. It can easily be adjusted to your taste. Grilling the fruit and peppers adds a unique taste to the salsa. We tend to not like things to be too spicy but you could add a little grilled jalapeno pepper to give it a little heat. Grilled pineapple would also be a yummy addition for more tropical flavor. And don’t forget some fresh grilled corn! You can eat it the salsa right after preparing it but it is usually even better after being refrigerated for a couple of hours or overnight. The recipe makes a lot! It is great over fish, on fish tacos or with chips!
I slice the cut the mangoes in half, removing the pit. I then peel them and cut them into 1/4 inch slices. I do the same with the peaches but I usually leave the skin on them. If you chop the mango and peaches before grilling they tend to cook too quickly and get mushy. The fruit does not require much before grilling. A little brush of olive oil to prevent sticking and a sprinkle of salt and pepper. Grill the fruit slices until grill lines begin to appear then carefully turn them using a spatula.
I slice the peppers into 1/2 inch strips for grilling. I usually grill them first, letting them cool before dicing while the fruit is grilling. I grill them just until grill lines begin to appear and remove them before they lose all their crunch.
Dice the cooled peppers and fruit. Dump the fruit, peppers and remaining ingredients in a bowl, toss it gently and you are done!
If you are following the 21 Day Fix Food Plan, I would count 1/2 cup salsa as approximately 1/4 purple container and 1/4 green container.
Grilled Peach and Mango Salsa
A sweet and flavorful salsa perfect for fish, pork, chicken, fish tacos or with chips as a dip!
2 large mangos - cut in half, peeled and cut into 1/4 inch slices
2 large peaches - cut in half and sliced into 1/4 inch slices
1 green bell pepper - sliced into 1/2 inch strips
1 red bell pepper - sliced into 1/2 inch strips
4 green onions, white and light green parts only, finely chopped
1/4 cup chopped cilantro
zest and juice of 1 lime
optional - 1 jalapeno pepper
Preheat an outdoor grill for medium high heat.
Lightly oil the grate or grill pan with olive oil (I use a grill pan)
Grill the peppers until they are lightly charred on all sides but still crunchy (about 5 -7 minutes)
Remove the peppers, brush the grill pan with oil once again.
Lightly brush the mango and peaches with olive oil and sprinkle them with salt and pepper.
Grill the mango and peaches about 2-3 minutes on each side until grill marks begin to appear.
Let the fruit and peppers cool.
Dice them into small pieces and place them in a large bowl.
Add onion, cilantro, lime zest and juice.
Toss gently to combine.
Adjust seasoning as desired.
Refrigerate 4 - 8 hours.
However you can use it right away but the flavor is even better if you wait!
1/2 cup salsa on the 21 Day Fix equals approximately 1/4 purple container and 1/4 green container.
