Basil, Scallop and Peach Kabobs - Healthy dinner perfect for company!

Grilled Basil, Peach and Scallop Kabobs

Living on the coast we are seafood lovers! And living in the south we are peach lovers! So why not combine the two?  These Basil, Scallop and Peach Kabobs are succulent and flavorful! The basil adds just the right touch (who doesn’t like fresh basil?).  Don’t like scallops? You can easily substitute peeled uncooked shrimp and achieve mouth watering results.  

These kabobs are clean and healthy fitting easily into a clean eating plan such as the 21 Day Fix. Two skewers equals 1 red and 1/4 purple on the 21 Day Fix Plan.  These make a beautiful presentation and are quick, only taking about 8 minutes to cook. So they are perfect for company or a special dinner without taking you away from the festivities for long. They are sure to impress and please all you serve them too!

I usually triple the seasoning and store the leftover for future grilling use. It is great on grilled shrimp and tilapia as well! Just add oil and lime zest, toss and grill! It does not get much easier and quicker than that! Summertime goodness! Scallops and Peaches!

Basil, Peach, and Scallop Kabobs

These kabobs may sound unusual but all the flavors come together to create a fabulous dish! They are healthy and perfect for company.

Ingredients
  1. 3 tablespoons olive oil
  2. 1 teaspoon of the following seasoning mixture: 4 teaspoons paprika,1 teaspoon red cayenne pepper, 1 teaspoon sea salt.
  3. Zest of 1 fresh lime
  4. 2 pounds large sea scallops
  5. 2 large peaches, pitted and sliced into 1/2 inch wedges
  6. 1 cup of large basil leaves, packed
  7. 10-12 skewers
Instructions
  1. Preheat the grill.
  2. Combine the olive oil, and seasonings in a large bowl and mix well.
  3. Add the lime zest, mix.
  4. Pat the scallops dry.
  5. Add the scallops and peach slices to the oil mixture.
  6. Gently toss the peaches and scallops to coat.
  7. Place a basil leaf on a skewer followed by a scallop, basil leaf, peach, basil leaf scallop, basil leaf and ending with a peach.
  8. Repeat with remaining skewers.
  9. Grill on medium high until scallops have grill marks (3 -4 minutes).
  10. Turn and continue cooking until the other side is lightly charred as well (3 - 4 minutes).
  11. Transfer to a serving platter and enjoy!
Notes
  1. I store the extra seasoning in an airtight jar or container for future use. It is great on other fish too!
