Oatmeal Muffins, a Healthy Breakfast to Go!

I have always had a sweet tooth and love baked goods!  In the morning the smell of muffins, coffee cake, or fresh bread baking is divine!  There is something comforting about the scent of cinnamon in the morning that is comforting, bringing back those wonderful childhood memories!  What a great way to start the day!  

I usually drink a Shakeology shake for breakfast (which I love) but once in awhile want to change it up.  I want to smell cinnamon throughout the house!  I want to munch on something yummy as I sip my morning coffee!  However, I am always running out the door early so I need something easy to make and healthy that I can eat on the run! 

So it is oatmeal muffins to the rescue!  These muffins are easy to make! They are healthy as no process sugar or flour is used! They are full of fiber and they can be baked while you are getting ready for work!  What is even better is that I can freeze them and warm them in the microwave or let them thaw on their own and eat them for a healthy snack!

Oatmeal Muffins: using the blender to mix saves time!To make this recipe as easy as possible for my morning rush I decided to use my trusty blender for the mixing! I first dump all liquid ingredients and flavorings in the blender and blend well. Then I add the banana and blend again. Next  I add half the dry ingredients at a time blending after each addition. I spray the muffin tin and pour in the batter a bake!  

Healthy oatmeal muffins, clean, free of processed sugars and flour! Just delicious !You can use a variety of toppings. My favorite are chocolate chips (banana and chocolate – you can’t go wrong), blue berries and raspberries.  However the combinations are endless so have fun adding fruits of your choice and even nuts!  

If you are following the 21 Day Fix these muffins fit nicely into the plan!  Each muffin equals 1/2 yellow container and 1/2 a purple container.  Don’t forget to count your toppings as well!

Oatmeal Muffins
Yields 12
Clean, healthy muffins that are free of processed sugar and flour. They are easy to make and can be frozen! Perfect for breakfast on the go!

Ingredients
  1. Nonstick cooking spray, I use coconut spray
  2. 2 large eggs
  3. 1 1/2 cups unsweetended almond milk
  4. 1 teaspoon vanilla extract
  5. 1/2 teaspoon almond extract
  6. 2 Tablespoons honey
  7. 1 Tablespoon cinnamon
  8. 2 large ripe bananas
  9. 2 1/2 cups old fashioned rolled oats
  10. 1 1/2 teaspoons baking powder
  11. Toppings: raspberries, blueberries, chocolate chips (1 - 2 teaspoons per muffin), nuts (1 teaspoon per muffin) or fruits of your choice.
Instructions
  1. Pre-heat oven to 350 degrees
  2. Spray muffin tin (12 muffin cups) and set it aside
  3. Dump eggs, almond milk, extracts, honey and cinnamon in a blender and blend well.
  4. Add bananas and blend again.
  5. Combine oats and baking powder in a bowl.
  6. Add half of the oat mixture at a time, blending to mix well after each addition.
  7. Pour the batter into the prepared muffin tin.
  8. Top with toppings.
  9. Bake 30 -45 minutes or until lightly browned and toothpick inserted in the center comes out clean.
Notes
  1. On the 21 Day Fix Plan one muffin is eaqual to 1/2 yellow and 1/2 half purple. Don't forget to count nuts or chocolate chips if used.
