I love Italian food ( I love all food) and despite the carbohydrates involved I am determined to enjoy all the things I love!. So tweaking a few recipes and substituting whole wheat pasta and other gluten free pastas are in order.  I have found that except for the color, whole wheat pasta and quinoa pasta really do not affect the flavor.  If I do not say anything, no one seems to notice! And best of all I it fits right in with our healthy, clean eating lifestyle!

Chicken Cacciatore was easy to clean up! I took out extra fat and used organic skinless, boneless chicken breasts.  I found that one of our local stores carries their own line of organic products.  These are much cheaper than some of the name brands.  Therefore, when possible I do use organic ingredients.  I also left cheeses out to allow people the option of cheese or no cheese and the amount they want!

Using the crock-pot allowed me to throw it together before work and have dinner ready except for cooking noodles when I got home!   Walking into the house after work I was greeted by delicious aroma of Italian spices! To make clean up easier I did use a crock-pot liner.

My husband and 2 year old grandson Finn gobbled it down! They even ate it for lunch the next day!  There was plenty leftover as it serves 10, so I froze some of the leftovers to have for a busy day. Therefore I got two dinners out of one recipe!

Pairing this dish with a fresh Italian garden salad drizzled with balsamic dressing makes a complete meal! Italian food inspite of it’s known carbohydrates can fit into a clean healthy eating plan such as the 21 Day Fix!

Ingredients
  1. 2 pounds uncooked boneless, skinless chicken breasts
  2. 8 ounces fresh sliced mushrooms
  3. 1 green bell pepper, chopped
  4. 1 medium onion, chopped
  5. 12 ounce can chopped Italian tomatoes or 2 fresh tomatoes, chopped
  6. 6 ounce can tomato paste
  7. 12 ounce can tomato sauce
  8. 2 cloves garlic or 2 teaspoons, minced/crushed
  9. ½ teaspoon dried oregano
  10. ½ teaspoon dried basil
  11. ½ teaspoon garlic powder
  12. 1 tablespoon Italian seasoning
  13. ½ teaspoon fennel seed
  14. ½ teaspoon pink Himalayan salt
  15. ½ teaspoon black pepper
  16. ¼ teaspoon crushed red pepper (optional)
Instructions
  1. Mix tomato sauce, chopped tomatoes, tomato paste and seasonings together in a bowl.
  2. Place chicken breasts in the bottom of the crock-pot.
  3. Cover with green peppers, onions and mushrooms.
  4. Pour tomato mixture over the top.
  5. Cover and cook on low for 8 hours.
  6. Shred chicken by pulling it apart using 2 forks.
  7. Serve over whole wheat pasta.
  8. Sprinkle with mozzarella cheese if desired.
