Sunday Mornings!!! Sleeping in, relaxing and cooking a proper breakfast! In the past this would have meant eggs, thick fluffy pancakes smothered in butter and sweet maple syrup with a side bacon and/or sausage. And don’t forget the fresh brewed coffee. I can smell the bacon cooking now!
Just because we have adapted a clean eating lifestyle we have not given up our Sunday morning breakfast or foods we love. We just clean them up a bit and discover new favorites! I found this Pancake recipe in Everyday DETOX by Megan Gilmore. I was intrigued that there was no wheat flour, dairy or sugar in them. And excited that they contain plenty of protein – 2 eggs per serving!
This morning was the perfect time to try them out as I had 2 very ripe spotted bananas sitting on the counter waiting to be used up – quickly. Keep in mind that the riper the bananas the sweeter they will taste. Since this recipe has no added sugar I opted for using really sweet bananas. It is a good way to use up those overly ripe, spotted bananas that no one will eat before they have to be tossed.
I love the simplicity of this recipe in that it requires only a few ingredients and that you toss the ingredients in a blender: blend, pour and cook! Watch them closely while they are cooking as these pancakes will brown quickly and can easily burn. The bananas combined with the coconut oil they are cooked in smell amazing. Add a little bacon and it definitely smells like a Sunday breakfast cooking.
My husband was a little hesitant about eating pancakes without flour but is always happy to be the tester. The pancakes were fragrant and surprisingly fluffy. He is not a maple syrup fan so I sprinkled them with a little organic cinnamon and sugar mix over them. A side of crispy nitrate free turkey bacon rounded out this breakfast! His verdict? “You can make these again”. I take that as a recipe we will keep!
Note: If you are following the 21 Day Fix plan I count 1 serving as 1 red, 1 purple and 1/2 yellow. Add part of a blue if you add nuts!
