Easy Fish Tacos with Mango Avocado Salsa

I love me some fish tacos!  It is one of my favorite dinners.  They are full of flavor that explodes in your mouth without being too spicy.  These Easy Fish Tacos with Mango Avocado Salsa are a regular on my 21 Day Fix Menu!  They are simple and quick to make and oh so good!    

Make your salsa, season your fish and pan fry it or grill it, heat your tortillas and put it all together! The salsa takes a little time to make (cubing the avocado and mango) but not too long so do that first as the fish cooks quickly. I also like the salsa to chill for about 30 minutes but if you are in a hurry you can use it sooner.

I like to use broccoli slaw as it adds an extra crunch to the tacos.  I buy broccoli slaw in a bag in the produce section (without dressing).  Using corn tortillas instead of flour allows me to have two tacos and use just one yellow container.  And we all know how precious those yellow containers are!  

I also used to use store bought taco seasoning when I made fish tacos but no more!  The first time I made and used the 21 Day Fix Smoky Southwestern Seasoning we were hooked!  I now make a large container of this yummy seasoning to have on hand! I keep it in empty seasoning jars and re-label them. It is great for regular tacos too!

Mango avocado salsa has just a few simple ingredients and pairs nicely with fish tacos!The mango avocado salsa contains just a few simple ingredients and pairs nicely with the tacos. As an added bonus mango, avocado and broccoli are all considered super foods!

For the 21 Day Fix meal plan I count 2 fish tacos with broccoli slaw and mango avocado salsa as:  1 yellow, 1 blue, ½ – 1 green, 1 red, ¼- 1/2  purple.

If you use cheese, yogurt or other toppings don’t forget to count for them!

Serve tacos with a salad and rice and black beans and you have a dinner fit for company! Enjoy!

Ingredients
  1. 12 oz tilapia, swaii or other white fish
  2. 2 Tablespoons 21 Day Fix Smoky Southwestern Seasoning
  3. 4 – 6 soft corn tortillas
  4. Olive oil or coconut oil spray
  5. Broccoli slaw
  6. Shredded Cheddar cheese – optional
  7. Plain Greek yogurt or non-fat sour cream - optional
  8. Mango Avocado Salsa
Instructions
  1. Sprinkle south west seasoning on the fish
  2. Spray frying pan with olive oil or coconut oil spray
  3. Heat pan
  4. Lightly spray corn tortillas ad heat in small frying pan or on grill until warm.
  5. Cook fish 4- 6 minutes on each side until cooked through. Fish should be flaky.
  6. Break fish into pieces to divide between tortillas (½ cup per taco)
  7. Top each taco with 1/4 - 1/2 cup broccoli slaw, ¼ cup mango avocado salsa and other toppings if desired.

This salsa contains just a few simple, clean ingredients. It is great on fish tacos!

Ingredients
  1. 1 avocado diced
  2. 1 mango diced
  3. 8 cherry or grape tomatoes quartered
  4. 2 Tablespoons lime juice
  5. ¼ cup chopped cilantro
Instructions
  1. Toss ingredients together.
  2. Chill for 30 minutes.
Notes
  1. Leftover salsa is great on salads or chicken!

Smokey Southwestern Seasoning
This smokey southwestern seasoning is great to use in place of store bought taco seasoning!

  1. 1 Tablespoon chili powder
  2. 2 teaspoons ground cumin
  3. 1 teaspoon coriander
  4. 1/2 teaspoon onion powder
  5. 1/2 teaspoon garlic powder
  6. 1/2 teaspoon dried oregano
  7. 1/2 teaspoon smoked paprika
  8. 1 teaspoon pink Himalayan salt or sea salt
Instructions
  1. Mix ingredients together and store in an air tight container.
Notes
  1. I usually triple this recipe and store it in an empty glass spice jar. That way I always have some on hand!
