We are a busy family and often get home late. Therefore quick, nutritious dinners that taste good are a must! This is one of our favorite, quick meals that is wonderful for a busy evening but good enough for company. The addition of peanut butter makes this dish quite tasty! My 2 year old grandson loves this dish!
Using frozen vegetables and soba noodles help reduce prep time. Soba noodles cook quickly, only 4 minutes in boiling water. I find organic buckwheat soba noodles in the oriental section of the grocery store. Frozen stir fry vegetables go nicely in this dish but you can use whatever combination of vegetables you like. I also often purchase frozen shrimp that is already shelled and deveined to save time.
Some people wonder what Liquid Aminos is. It is similar to soy sauce but less processed. We use BRAGG Liquid Aminos. My family does not notice any difference in taste whenever I substitute it for soy sauce. In fact they did not even know I was not using soy sauce.
Living on the coast we like our seafood and shrimp fits in this dish nicely. However you could easily substitute chicken for the shrimp. I have also used scallops along with the shrimp to make it extra special.
If you are following the 21 Day Fix Plan just measure out the noodles, vegetables and shrimp separately, using the appropriate containers. In addition count two teaspoons.
