We had one of the “little’s” (our 2 year old grandson) with us yesterday and due to his request we made an impromptu trip to the beach to play in the sand and watch the sunset.
After a bath to get all the sand off a bedtime snack was in order. So I made these Double Chocolate Peanut Butter Cookies. These are delicious, chocolaty and one of our favorites! The are flourless, and free of refined sugars! Coconut sugar replaces refined white sugar in this cookie. They are not as sweet as other cookies, promoting the taste of chocolate. If you prefer a sweeter cookie add 2 – 3 tablespoons of organic sugar. The only fat is from the peanut butter, no butter or oil is needed. They are quick to mix up and bake. By the time they had cooled, Finn was in his pajamas and on the couch with his pillow and blanket ready to snack and watch his chosen DVD for this evening, “Bob the Builder”.
1 cup natural (organic) salted creamy peanut butter at room temperature
2/3 cup coconut sugar (If you like a sweeter cookie try add 2 – 3 tablespoons of organic sugar)
1/2 teaspoon vanilla extract
4 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
1 large egg
1/2 cup (plus extra for topping) bitter sweet (60% cocoa) chocolate chips
Preheat the oven to 350 degrees F.
Line baking sheets with parchment paper
In a medium sized bowl, beat together the peanut butter, coconut sugar, and vanilla extract.
In a separate small bowl, combine the cocoa powder, salt, and baking soda.
Add cocoa powder mixture to the peanut butter mixture and beat until creamy.
Add the egg and beat until just combined
Stir in 1/2 cup chocolate chips by hand
Form balls of dough (approximately 1 inch round)
Using the back of a spatula press the balls down (I use knife or another spatula to help slide the dough back onto the cookie sheet as it tends to stick when pressed down)
Press 2 – 3 chocolate chips into the top if desired.
Bake for 6-8 minutes (Mine took 7 minutes). Watch them carefully because they burned quickly due to the coconut sugar.
These cookies are crumbly while they are hot. Let them cool completely before taking them off the cookie sheet.
