I can’t tell you all how much I love pumpkin!  My husband loves muffins and sweet breads.  So I decided to try and clean up a muffin recipe to be a bit healthier.  These muffins are sweet so watch how many you eat! Hubby ate 6 for breakfast, right out of the oven (he has a great metabolism….not fair).  He didn’t talk much while eating so I would say that they were a success.  I used organic brown sugar as I was out of pure maple syrup but I think that the maple syrup would add to the fall flavor of these muffins.  If you try it let us know how they turned out.  In Trader Joe’s I discovered spiced pumpkin seeds and used those to sprinkle on top of the muffins but raw or dry roasted pumpkin seeds work well too. These are gluten free and refined sugar free! For a treat or company they are perfect.

Cleaned-Up Pumpkin Muffins, gluten free, refined sugar free!

Cleaned-Up Pumpkin Muffins

Ingredients:

  • 1 cup Gluten Free All Purpose Flour such as Bob’s Red Mill
  • 1 Tablespoon pumpkin pie spice
  • 2 teaspoons gluten free baking powder
  • ½ cup (1 stick) organic butter, softened at room temperature
  • 3/4 cup packed organic brown sugar or 1/4 plus 1/8 cups maple syrup
  • 1 cup organic pumpkin puree
  • 2 eggs (I use organic eggs)
  • 2 teaspoons pure vanilla extract
  • ½ cup chopped pecans
  • ¼ cup pumpkin seeds

Instructions:

  • Preheat oven to 350 degrees
  • Spray a muffin tin with non-stick spray such as coconut spray or line with paper cupcake liners.
  • Using an electric mixer cream together the butter and sugar until well mixed and fluffy.
  • Add pumpkin puree, eggs and vanilla and mix until blended.
  • Add pumpkin pie spice, baking powder and gluten free flour. Mix until dry ingredients are no longer visible.
  • Stir in chopped pecans.
  • Spoon batter into muffin tins.
  • Sprinkle with pumpkin seeds.
  • Bake for 35 minutes and a toothpick inserted into the middle comes out clean.
