Cleaned-Up Peanut Butter Rice Crispy Treats

Who doesn’t love rice crispy treats? Crunchy, gooey, sticky sweetness mmm…. And what about the ones made with peanut butter and butterscotch? They were my favorite!
Now that the “littles” (grandchildren) are here I wanted to be able to share the fun of making these crispy delights as well as eating them. So I decided to “clean them up” a bit. There are not too many ingredients in rice crispy squares so I figured the substitutions could not be too difficult. In fact I only used 4 ingredients. I found organic crispy brown rice cereal at the grocery store, organic peanut butter and decided on honey for the sticky gooey sweetener. A little vanilla extract added just the right touch. To keep them gooey mixture from sticking to my hands, I did rub a little coconut oil on them. It worked like a charm! The result was pure crunchy, sticky, deliciousness!

Cleaned-Up Peanut Butter Rice Crispy Treats
Ingredients
- 1/2 cup honey (I used orange blossom honey)
- 1/2 cup creamy organic peanut butter
- 4 cups of organic crispy brown rice cereal
- 1/2 teaspoon pure vanilla extract
- coconut oil for greasing hands
Instructions
- Prepare a 8″ x 8″ baking dish by lining it with parchment paper or foil (I used non-stick foil because I was out of parchment paper).
- Pour the brown rice cereal in a large bowl and set aside.
- Pour the honey into a small saucepan.
- Bring honey to a boil and cook for 1 minute.
- Turn to simmer and add the peanut butter and vanilla.
- Stir well until it is well combined.
- Pour the peanut butter honey mixture over to brown rice cereal.
- Mix well until all cereal is coated.
- Pour (dump) cereal mixture into the prepared baking dish.
- Rub coconut oil on your hands and pat the mixture firmly into the baking dish so that it is well compacted (you don’t want crumbly rice crispy bars).

- Let bars cool before cutting them with a sharp knife.
- Cut into 16 squares.
