I plant tomatoes every summer except for this summer… Life got busy and much to my dismay I never got a garden planted. However I was surprised by a whole garden of volunteer tomato plants that popped up in my garden bed. While we have a couple of red tomato plants, most are little yellow pear tomatoes. We love those little yellow gems! They are good to just pop in your mouth but I love to use them in salads as well.
This watermelon tomato salad may seem like an odd mixture but it is a favorite. The combination of flavors is so yummy and refreshing. I used the little yellow pear tomatoes for color and because I had an abundance of them in my garden. Chilling the salad before serving enhances the flavors even more.
2 cups of cubed watermelon
1 cup of cherry tomatoes sliced in half
2 oz of Goat Cheese, crumbled
2 TBS fresh basil sliced thin (I find using kitchen scissors to cut the basil is easier and quicker than using a knife.)
Balsamic vinaigrette
Place watermelon and tomatoes in a bowl.
Add goat cheese and basil.
Drizzled balsamic vinaigrette on top and toos gentle.
Chill and enjoy!
