Leftover Chicken & Bean Quesidilla

Need a quick and easy meal… use leftover! That’s what my husband did and it turned out surprisingly delicious. We had chicken leftover from our taco night and beans left from our burger night so we put the two together and voilla, instant 5 minute meal on the grill. The sweetness of the beans is a little different but we liked it! We did roast some squash to put on the side to get our veggies in.
- 1/2 cup of chicken from Chicken taco recipe
- 1/2 cup of beans from baked bean recipe
- 1 cup shredded cheddar cheese
- 4 tortilla (we used spinach but if you are trying to be extra healthy look for the sprouted tortillas and skip the flour!)
- Non Stick Grill Spray
On 1 tortilla spread 1/2 the chicken, 1/2 the beans and sprinkle with cheese. Place the other tortilla on top. Repeat to make your 2nd quesadilla. Use a quesadilla grill tool or a grilling pan to prevent things from falling in. Spray the pan or tool with spray and place on the grill at medium heat, about 3 mins each side or until slight brown bubbles appear and cheese is melted. Slice and enjoy!!
