Woo Hoo! Cal-zones for the 21 Day Fix!

Eating healthy and clean does not mean you have to give up all your favorite foods. We love pizza, Stromboli and cal-zones….. Who doesn’t! Weekends are made for these Italian delights! The problem is they don’t always fit into our clean eating, healthy meal plans… However they can and these cal-zones do! To top it off they are easy and quick to make using whole wheat “flat out” bread for the crust (this bread is also great for making a single serving healthy pizza). My husband does not even realize that this is a healthy version of one of his favorite meals. I will change it up by varying the vegetables (mushrooms, broccoli, fresh tomatoes, sweet peppers…) and even adding in some Italian turkey meatballs on occasion. For the one pictured I added a few little yellow pear tomatoes (our garden was overflowing with these gems). Serve these Italian delights with a fresh veggie salad and you have a complete healthy meal! If following the 21 day Fix plan the recipe below will count as 1 red, 1 yellow, 1 blue and 1/2 purple.
Healthy Cal-zones
Serves 1
Ingredients
- 3/4 cup of low fat part skim ricotta cheese
- 1/4 cup of shredded part skim mozzarella cheese
- 1 tsp Italian seasoning
- 1 tablespoon of chopped fresh basil
- 1 cup of chopped fresh spinach leaves
- coconut oil or olive oil cooking spray
- 1 slice whole wheat “flat out” bread
- 1 egg white (optional)
- 1/4 – 1/2 cup marinara sauce
Instructions:
- Preheat oven to 450 degrees
- Spray a cookie sheet with cooking spray.
- Mix cheeses, spinach and seasonings together.
- Spray the flat out bread with cooking spray (this will help seal the edges when you fold it over)
- Place mixture on one side of the flat out bread.
- Fold the bread over and pinching the edges together and using a fork to seal it.
- Place the cal-zone on the prepared baking sheet.
- Brush the cal-zone with the egg white to give it a shiny finish (optional).
- Bake the cal-zones for 20 minutes or until brown.
- Heat 1/2 cup of marinara sauce in a small dish to serve on the side for dipping.
Note: You can make variations by changing the filling. Use different veggies or even meatballs!

Healthy Calzones
