Cleaned-Up Cookies: Pumpkin Bites
It is fall! And fall means Halloween, Thanksgiving, sweaters, and pumpkin! I love everything pumpkin. Pumpkin pie, pumpkin cake, pumpkin bread, pumpkin waffles, pumpkin chili, and of course pumpkin COOKIES! This recipe is “cleaned up”. It uses almond flour/meal in place of white flour and coconut sugar or organic raw brown sugar in place of white sugar. I prefer coconut sugar. Coconut sugar is a perfect choice for these cookies, its caramel taste compliments the pumpkin perfectly. These cookies are a soft cake like texture. No one will guess they are not made with flour! The heat up nicely in the microwave and are a delicious breakfast treat (or anytime treat) with a cup of coffee or tea. Pumpkin spice tea is a perfect match for them!
Cleaned-Up Cookies: Pumpkin Bites
Ingredients
- 1 cup of almond butter

- 3/4 cup of organic pumpkin puree
- 1 teaspoon of vanilla
- 1 egg
- 1 cup of almond flour
- 1/2 tsp of baking soda
- 5 tablespoon of coconut sugar or raw brown sugar if you can’t find coconut sugar
- 1 tablespoon of pumpkin pie spice
You will need extra coconut sugar for sprinkling on top of the cookies. This gives then just the right amount of sweetness and a little sparkle!
Directions
- Preheat oven to 350 degrees.
- Line 2 baking sheets with parchment paper.
- Combine all of the dry ingredients together in a bowl.

- Combine the wet ingredients in a small bowl and mix well.
- Make a well in the dry ingredients and pour in the wet mixture.
- Mix well, the dough should be sticky. (you do not need a mixer for this as it mixes easily by hand).
- Drop rounded tablespoons of dough onto the lines cookie sheets.
- Gently flatten out each cookie. If needed dip the bottom of a glass in almond flour before flattening the cookie as the dough is sticky.
- Sprinkle a tiny bit of coconut sugar on top of the cookies.
- Bake for 13 – 15 minutes or until edges are golden.
- Enjoy with a cup of pumpkin spice tea!
