Cleaned-Up Cookies: Cinnamon Bites

This family loves their sweets! Cookies are near and dear to us. Cleaner versions of our favorites are absolutely necessary. This cinnamon cookie is reminiscent of snickerdoodles. Who doesn’t love snickerdoodles? This version results in a softer cookie that is not quite as sweet. It does not contain flour or white sugar. Instead it is made with almond flour, a bit of coconut flour and honey for sweetener.
I made these when my husband and I were watching the “little’s plus one” (two of our grandchildren and one of their friends). The toddlers each ate 4 cookies as soon as soon as they cooled. They declared them good and we all know that young children can be brutally honest when it comes to food. My husband not to be out done ate six!
The house smelled wonderful! It was filled with a yummy cinnamon scent. Great for a damp fall day. When the parents came home they all ate more than a cookie or 2 and declared them a winner!
Cleaned-Up Cookies: Cinnamon Bites
Ingredients
- 1 1/2 cups almond flour/meal
- 1 tablespoon coconut flour
- 1/2 tsp cinnamon
- 1/2 tsp baking soda
- 1/2 tsp nutmeg
- 1/4 tsp sea salt
- 1 egg
- 1/4 cup honey or pure maple syrup (we prefer honey)
- 1/4 cup melted coconut oil
- Cinnamon for rolling (I used about 1/4 of a large jar)
Directions
- Combine dry ingredients in a mixing bowl
- Add eggs, honey and coconut oil.
- Stir until well combined. The mixture will look mealy due to the almond meal.
- Cover the bowl and refrigerate for at least 1 hour. This step is important to stiffen the dough so you can form it into balls.
- Prepare cookie sheets by placing parchment paper on each sheet.
- Preheat Oven to 350 degrees.
- Form the dough into 1 inch balls and roll each in cinnamon to coat them well.
- Place balls on cookie sheets.
- Press each ball gently with the bottom of a glass to flatten them.
- Bake for 10 minutes. Do not over bake as almond flour burns easily!
- Transfer cookies to cooling rack.
- Breathe in the wonderful aroma, take a bite and enjoy!
Makes 2 dozen cookies depending upon how big you make them.
