Chicken Parmesan Burgers

Summer is coming to an end and we have gotten tired of regular ole burgers for dinner.  To change it up a little I made chicken Parmesan burgers. They were perfect, adding a little variety to our weekday meals.  I served them with whole wheat buns but ate mine without a bun. Fresh roasted organic veggies were served as a side.  Sweet potatoes, peppers, tri-colored carrots, eggplant and zucchini made up the mix. And of course a fresh green salad was served to get those raw veggies in!

Chicken Parmesan Burgers


  • 2 teaspoons olive oil
  • 1 medium chopped onion
  • 1 1/2 tablespoons chopped fresh oregano
  • 3 garlic cloves, minced
  • 1 pound ground chicken breast meat
  • 1/4 cup grated Parmesan cheese
  • 1 cup tomato basil marinara sauce (we use organic)
  • 1/4 teaspoon crushed red pepper
  • salt and pepper
  • coconut or olive oil cooking spray
  • 1 cup shredded part skim mozzarella cheese
  • fresh basil leaves, cut in slivers


  • Heat oven to 350 degrees.
  • In a medium skillet heat the olive oil, swirling to coat the pan.
  • Add the onion, garlic, and oregano.
  • Saute’ until softened about 3-5 minutes.
  • Transfer the onion mixture into a large mixing bowl and let it cool.
  • Add the chicken, Parmesan cheese, 1/2 cup marinara sauce, and remaining seasonings to the bowl.
  • Mix well. Don’t be afraid to use your hands as this is the best way to assure it is well combined.  It is messy work but so worth it!
  • Shape the chicken into four – six patties depending upon how large you want them (I usually make 6).
  • Refrigerate the patties for 10 – 15 minutes.
  • Line a baking pan with foil and spray it with cooking spray.
  • Place the patties on the baking sheet and bake for 20 minutes or until done turning them once.
  • Place  2 tablespoons of marinara sauce on top of each pattie followed by 2 tablespoons of mozzarella cheese.
  • Return chicken to the oven and bake until the cheese melts.
  • Remove these delightful burgers to a serving platter and sprinkle with freshslivers of basil.
  • For extra goodness serve them on toasted buns with fresh baby spinach leaves!
