Who doesn’t love a good taco bar? You get to choose what you want and using slow cooked chicken taco meat means it is ready when you get home. Prepare your toppings ahead of time and the wait time for dinner will be minimal! If you are following the 21 Day Fix Program 2 Tacos is equal to 1 red, and 1 yellow. Additional containers for toppings are determined by what you put on your tacos.
Serves 4+
4 boneless skinless chicken breasts
¾ cup of your favorite beer
1 ½ tsp cumin
½ tsp smoked paparika (there is a difference between smoked and regular so make sure and use the smoked)
¼ tsp garlic powder
¼ tsp onion powder
pinch of cayenne pepper
soft corn taco shells
Your favorite taco toppings: sour cream/plain greek yogurt, cheese, black beans, lettuce, tomatoes, avocado, cilantro, salsa ….
Place chicken in the bottom of the slow cooker.
Mix together the seasoning in a small bowl.
Pour ¾ C of your favorite beer into a separate bowl (you can drink the rest)
Mix 1 ½ Tbsp. of your seasoning mixture into the beer.
Pour beer mixture over the chicken and cook on low for 7-8 hours or on high for 4 hours.
When it is done cooking pull apart the chicken using 2 forks so it looks shredded.
Taste and season as needed with additional seasoning mixture. Let cook for 15 more minutes with the lid off before turning off the slow cooker.
Remove meat to a bowl using a slotted spoon.
Set out chicken, bowls of toppings and warm corn tortillas.
Now for the fun part! Create your own tacos with toppings from your taco bar! Use the leftovers for lunch the next day to make a chicken taco salad!
We like to serve Cilantro Lime rice with the tacos for a side dish.
