Fixate Cucumber Hummus Roll-Ups

For people trying to eat clean, a pot-luck gathering can be tricky. Not only is eating at one without overdoing it a challenge but deciding what to bring can be a challenge as well. I needed to bring a side dish to a pot luck luncheon. I could always take veggies and dip, a salad, or a fruit plate but I wanted to bring something a little bit different. I picked up my Fixate cookbook to see what Autumn Calabrese (21 Day Fix and 21 Day Fix Extreme) had in there that might fit the bill. As I glanced through I saw a picture of the cucumber hummus roll-ups. They looked so pretty! And I do like pretty food… I decided they would be perfect.  The little roll ups were easy to make, pretty and best of all yummy! I used a Mandolin type slicer to slice the cucumbers, it made perfect cucumber strips. For those on the 21 Day Fix Meal Plan 4 roll ups equals ½ green container and ½ blue container. I doubled the recipe making a total of 16 rolls.

Serves: 2 (4 rolls each)

Ingredients

  • 1 large cucumber
  • ¼ cup store bought hummus (you can use homemade hummus if you would like)
  • ¼ cup roasted bell peppers (I did not have any so I used a combination of red and yellow peppers and slivers of carrots. You could also use sun dried tomatoes, capers, fresh herbs, sliced green onions)
  • toothpicks

Directions

  • Use a vegetable peeler or Mandolin to slice the cucumber into long thin slices (you need 8 slices of cucumber).
  • Place the cucumber slices on top of paper towels, blotting the top of each slice with a paper towel as well. This will make the surface less slick so the hummus will spread easier.
  • Spread the hummus evenly on each slice.
  • Top each cucumber slice with peppers or veggies of your choice.
  • Start at one end of each cucumber slice roll it up loosely.
  • Secure it with a toothpick and place it on a plate with the seam on the bottom.
  • Enjoy!
