For people trying to eat clean, a pot-luck gathering can be tricky. Not only is eating at one without overdoing it a challenge but deciding what to bring can be a challenge as well. I needed to bring a side dish to a pot luck luncheon. I could always take veggies and dip, a salad, or a fruit plate but I wanted to bring something a little bit different. I picked up my Fixate cookbook to see what Autumn Calabrese (21 Day Fix and 21 Day Fix Extreme) had in there that might fit the bill. As I glanced through I saw a picture of the cucumber hummus roll-ups. They looked so pretty! And I do like pretty food… I decided they would be perfect. The little roll ups were easy to make, pretty and best of all yummy! I used a Mandolin type slicer to slice the cucumbers, it made perfect cucumber strips. For those on the 21 Day Fix Meal Plan 4 roll ups equals ½ green container and ½ blue container. I doubled the recipe making a total of 16 rolls.
